I had a great couple of weeks shooting the latest & greatest cookbook, "Fabulicious!: Fast & Fit", for Teresa Giudice (the real REAL housewife of New Jersey). There were a few crazy moments like when we lost power during our last shoot day, but fortunately for us "papa" Giudice had a generator handy & we were quickly back in business.

I had the amazing opportunity of shooting this cookbook last summer with the very inspiring, talented & over-all awesome kid, Jack Witherspoon. While recovering from leukemia for the second, time Jack sought solace in the Food Network & decided his dream was to become a chef.

Forget About Me

Among the things the sea throws up,

let us hunt for the most petrified,

violet claws of crabs,

little skulls of dead fish,

smooth syllables of wood,

small countries of mother-of-pearl;

let us look for what the sea undid

insistently, carelessly,

what it broke up and abandoned,

and left behind for us.

Petals crimped up,

cotton from the tidewash,

useless sea-jewels,

and sweet bones of birds

still in the poise of flight.

The sea washed up its tidewrack,

the air played with the sea-things;

when there was sun, it embraced them,

and time lives close to the sea,

counting and touching what exists.

The Winemaker Cooks: Menus, Parties and Pairings, by Christine Hanna.

The president of Hanna Winery & Vineyards in Sonoma County has developed seasonal recipes revolving around wine, with inspiration for year-round entertaining.

As she introduces each season, Hanna describes the state of her vineyards and garden, then provides five menus, such as an autumn dinner with spicy eggplant caviar with pita crisps, pan-seared hanger steak with porcini-Merlot reduction, and pear tart tatin with ginger ice cream. She stays close to home with her wine pairings, suggesting a Sonoma or Napa Cabernet Sauvignon.

The recipes are approachable and the ingredients readily available and the photographs capture the beauty of the food. To round things out, her concise answers to questions like "What are sulfites?" are sprinkled among the pages.

Fall at the Apple Farm

I got lost for a couple of days near the coast of Mendocino in the Anderson Valley shooting a story about an apple farm. Not only is the farm family owned & operated, it is also 100% organic & biodynamic. I was lucky to spend the night at the Boonville Hotel - "it's about people, food, drink and a well made bed" and I'd like to add - an awesome bomb fire! Thanks Johnny for treating us like kings & queens. If you live in California I suggest you get in a car & take a road trip right now to this part of the state. Do it while the fall foliage is vibrant & alive with color! It was breathtaking & inspiring.

This charitable event, hosted by Wolfgang Puck, has raised more than $15 million for the Meals on Wheels Programs of Los Angeles. I commonly get requests for advice on how to take better photos of plated food. Believe me, it's not as easy as it looks! I'd like to use this page to periodically share some of my favorite tips and tricks. Please let me know if these are useful to you and feel free to share some of your own!

1. Plan Your Shot
Once food is cooked and plated, the clock has started! You've got to move fast to capture the dish at its peak moment of beauty and freshness. Wait too long, and that "magic moment" will pass. It's important to get all of your props in place, your composition well-considered, and your set-up stable before the plate arrives. Plan your shot before the hot food arrives!

2. Get Closer, Open Up Your Lens Aperture
If possible, fill the entire frame with your subject and use a wider aperture setting. The resulting shallow depth-of-field will throw everything but a few inches of your plate out of focus, blurring the background and highlighting the texture of your food item. Use focus to carefully showcase the most important ingredients. Trust your instincts and have fun!

3. Watch the Color of Your Lighting
Your job is to make a dish look as yummy and appealing as possible. Certain light sources have a color cast that will work against you. (Fluorescent lighting, for example, will tint an image an unsightly shade of green.) Use your camera's built-in white balance settings to compensate for less-than-optimal lighting sources.

This is an inexpensive Flash-based player that's easy to install, highly-customizable, and relatively easy to update. Nice smooth transitions and awesome controls. My top choice!

In October, Michael Pollan (author of "The Omnivore's Dilemma") wrote a letter to the incoming President-Elect outlining the policies that he hoped the new President would take into consideration from the perspective of sustainable agriculture.

One of the ideas put forward is to dedicate part of the White House lawn for a victory garden. As you probably know, during World War II, victory gardens were grown all over the country. Even Eleanor Roosevelt planted a garden at the White House.

It's time to bring back the victory garden! It will not only provide food for the White House, but symbolically supported the idea that sustainable agriculture is an important part of the Obama administration's new national agenda.
